Ingredients:
- 1 lb. fresh salmon fillet, skin removed and chopped into small pieces
- 1/2 cup seasoned breadcrumbs
- 1 egg, lightly beaten
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
- 1 tbsp. Dijon mustard
- 1 tbsp. lemon juice
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 4 whole wheat hamburger buns
- 2 ripe avocados, pitted and sliced
- 1 lime, juiced
- 1/4 cup mayonnaise
Start by chopping the salmon fillet into small pieces and placing them in a large mixing bowl. Add the breadcrumbs, egg, parsley, red onion, Dijon mustard, lemon juice, garlic powder, salt, and black pepper to the bowl. Mix well until all ingredients are evenly combined.
Divide the mixture into 4 equal portions and shape each portion into a patty. Preheat your grill to medium-high heat and oil the grates. Place the patties on the grill and cook for 4-5 minutes on each side, or until the internal temperature reaches 145°F.
While the burgers are cooking, prepare the avocado and lime mayo. In a small mixing bowl, mash the avocado until it is smooth. Add the lime juice and mayonnaise to the bowl and mix well.
To assemble the burgers, place each patty on a whole wheat bun and top with a generous dollop of the avocado and lime mayo. Serve immediately and enjoy!
