Looking for a delicious and satisfying Korean dish that will warm you up on a chilly evening? Look no further than dubu kimchi, a savory and spicy stew made with soft tofu, kimchi, pork, and a variety of vegetables. Here's how to make it:

Ingredients:

  • 1 block (14 oz) of soft tofu
  • 1/2 cup of kimchi (finely chopped)
  • 4 oz of pork belly (thinly sliced)
  • 1/2 onion (thinly sliced)
  • 1/2 zucchini (sliced into half-moons)
  • 2-3 green onions (chopped)
  • 2 cups of water or broth
  • 1 tbsp of gochujang (Korean red pepper paste)
  • 1 tbsp of soy sauce
  • 1 tbsp of minced garlic
  • 1 tbsp of sesame oil
  • Salt and pepper to taste

Instructions:

  1. First, prepare your ingredients. Thinly slice the pork belly and onion, slice the zucchini into half-moons, and chop the green onions.
  2. In a pot or dutch oven, heat up the sesame oil over medium heat. Add the pork belly and cook until browned and crispy, about 5-7 minutes.
  3. Add the onions and minced garlic and sauté for another 2-3 minutes, until the onions are translucent.
  4. Add the chopped kimchi and gochujang and stir to combine with the pork and onions. Cook for another 2-3 minutes, until the kimchi is slightly softened and fragrant.
  5. Next, add the sliced zucchini and stir to combine. Pour in the broth or water and bring to a boil.
  6. Cut the soft tofu into bite-sized pieces and carefully add it to the pot. Reduce the heat to low and simmer for 10-15 minutes, until the tofu is heated through and the vegetables are tender.
  7. Season with soy sauce, salt, and pepper to taste. Garnish with chopped green onions and serve hot with rice.
This dubu kimchi recipe is perfect for a cozy night in or for serving to friends and family. The soft tofu and tender vegetables absorb all of the spicy and savory flavors of the kimchi and pork, making each bite a delicious and satisfying experience. Give it a try and enjoy!
