If you're a fan of Thai street food, you have to try this Spicy Vegetable Pad Thai recipe. This classic Thai dish combines stir-fried noodles with fresh vegetables, peanuts, and a spicy sauce for a flavorful and satisfying meal.
Ingredients:
- 8 oz. rice noodles
- 2 tbsp. vegetable oil
- 2 garlic cloves, minced
- 1 small red onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large carrot, julienned
- 1 cup bean sprouts
- 1/2 cup roasted peanuts
- 2 tbsp. soy sauce
- 2 tbsp. brown sugar
- 1 tbsp. fish sauce
- 1 tbsp. lime juice
- 1 tsp. paprika
- 1 tsp. chili flakes
Instructions:
- Soak the rice noodles in warm water for 20-30 minutes until softened. Drain and set aside.
- In a wok or large frying pan, heat the oil over medium heat. Add the garlic and stir for 30 seconds until fragrant.
- Add the onion and peppers and stir-fry for 2-3 minutes until softened.
- Add the carrots and bean sprouts and stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Add the drained noodles, peanuts, soy sauce, brown sugar, fish sauce, lime juice, paprika, and chili flakes to the pan. Toss everything together and stir-fry for an additional 2-3 minutes until the noodles are heated through and everything is well combined.
