Ingredients:
- 2 lbs boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with non-stick cooking spray.
- In a large skillet over medium-high heat, add the sliced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- Add the sliced peppers, onions, and minced garlic to the same skillet and sauté until the vegetables are tender and slightly charred.
- Return the chicken to the skillet with the vegetables and add the spices. Stir to combine.
- Transfer the chicken and vegetable mixture to the prepared baking dish.
- Sprinkle the shredded cheddar cheese over the top of the chicken and vegetables.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
