Ingredients:
- 6 cups chicken or vegetable broth
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 1/2 cups Arborio rice
- 1/2 cup white wine
- 1 lb mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
Before you begin, heat the broth in a separate pot and keep it simmering on low heat. This will ensure that you have hot broth to add to the risotto as you cook it.
Now, heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the minced garlic and cook for another minute.
Add the Arborio rice to the saucepan and stir until it's coated with the oil and onions. Pour in the white wine and stir until it's absorbed by the rice. Begin adding the hot broth, one ladle at a time, stirring frequently. Wait until each ladle of broth is absorbed before adding the next one. This should take about 20 minutes.
