Ingredients:
- 1 block of firm tofu, drained and pressed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
To start, preheat your oven to 400 degrees Fahrenheit. While the oven is heating up, prepare the vegetables by slicing them into thin pieces. Place the sliced vegetables onto a baking sheet lined with parchment paper.
