Ingredients:
- 1 pound beef sirloin, sliced thinly
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 1 cup snow peas
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- Cooked rice, for serving
Begin by heating the vegetable oil in a large skillet or wok over high heat. Add the sliced beef and cook for 2-3 minutes, or until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onion. Cook for 2-3 minutes, or until the vegetables are slightly softened. Add the minced garlic and grated ginger and cook for an additional 1-2 minutes.
Add the snow peas and cooked beef to the skillet and stir to combine.
In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, red pepper flakes, and salt and pepper until smooth.
Pour the peanut sauce over the beef and vegetable mixture and stir to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened and the vegetables are cooked to your liking.
Serve the beef and vegetable stir-fry with cooked rice and garnish with chopped peanuts and cilantro, if desired. Enjoy!
