Grilled eggplant with tahini sauce is a perfect dish for vegetarians and those who love Middle Eastern cuisine. This recipe is easy to make and is bursting with flavors. The eggplant is grilled to perfection, giving it a smoky flavor that pairs perfectly with the rich and creamy tahini sauce.
Ingredients
- 2 medium-sized eggplants
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tahini
- 1/4 cup water
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/4 teaspoon cumin
To begin, slice the eggplants lengthwise into 1/2 inch thick slices. Brush each slice with olive oil and season with salt and pepper. Preheat your grill to medium-high heat and grill the eggplant slices for 3-4 minutes on each side, or until they are tender and have grill marks.
While the eggplant is grilling, prepare the tahini sauce. In a small bowl, whisk together the tahini, water, minced garlic, lemon juice, cumin, and a pinch of salt. Whisk until the sauce is smooth and creamy.
Once the eggplant is done grilling, arrange the slices on a platter and drizzle the tahini sauce on top. Garnish with fresh parsley leaves and serve warm. This dish can be enjoyed as a side or a main course, and pairs well with pita bread, rice, or quinoa.
