Delicious Stuffed Peppers with Ground Beef and Rice Recipe

Ingredients:

  • 4 bell peppers (any color)
  • 1 lb. ground beef
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. dried oregano
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain off any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
  5. Add the can of diced tomatoes (undrained) to the skillet, along with the cooked rice, salt, black pepper, paprika, and dried oregano. Stir to combine.
  6. Spoon the ground beef and rice mixture into the prepared bell peppers, filling each pepper to the top.
  7. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil from the baking dish and sprinkle the shredded mozzarella cheese over each stuffed pepper.
  9. Bake the stuffed peppers, uncovered, for an additional 10-15 minutes or until the cheese is melted and bubbly.
  10. Remove the baking dish from the oven and let the stuffed peppers cool for a few minutes before serving.
