Ingredients:
- 1 head of cauliflower, grated
- 1 cup of diced carrots
- 1 cup of diced celery
- 1 small white onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons of coconut oil
- 4 eggs, beaten
- 1/4 cup of soy sauce
- 1/4 teaspoon of black pepper
The key to this recipe is using cauliflower instead of rice. Simply grate the cauliflower into small pieces to create the same texture and consistency as rice.

Instructions:
- Heat the coconut oil in a large skillet over medium-high heat.
- Add the diced onion and garlic and cook until fragrant, about 2-3 minutes.
- Add the diced carrots and celery and cook until tender, about 5-7 minutes.
- Push the vegetables to the side of the skillet and add the beaten eggs to the empty space. Scramble the eggs until cooked through.
- Add the grated cauliflower to the skillet and mix everything together.
- Add the soy sauce and black pepper and cook for an additional 3-5 minutes, until the cauliflower is tender and everything is heated through.
