Passover Zucchini Fritters Recipe: Crispy and Delicious!

Passover is a time for family gatherings and delicious food, and these zucchini fritters are the perfect addition to any Passover meal. Made with grated zucchini, matzo meal, and eggs, these fritters are crispy on the outside and tender on the inside. Serve them with a dollop of sour cream or your favorite dipping sauce for a tasty appetizer or side dish.

Ingredients:

  • 2 medium zucchinis, grated
  • 1/2 cup matzo meal
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil, for frying

Instructions:

  1. Grate the zucchinis and place them in a large bowl.
  2. Add the matzo meal, beaten eggs, salt, and black pepper to the bowl and mix until well combined.
