Satisfy your cravings with scrumptious Sautéed Shrimp with Zucchini Noodles and Cherry Tomatoes

Ingredients:

  • 1 pound of shrimp, peeled and deveined
  • 2 medium-sized zucchinis, spiralized into noodles
  • 1 pint of cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the halved cherry tomatoes and paprika, cooking until the tomatoes start to soften and release their juices, about 5-7 minutes.
  4. Remove the tomato mixture from the skillet and set aside in a bowl.
  5. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
  6. Remove the shrimp from the skillet and set aside in a bowl.
  7. Add the spiralized zucchini noodles to the skillet and sauté for 2-3 minutes until they are tender but not mushy.
  8. Add the tomato mixture and shrimp back into the skillet and toss everything together until heated through.
  9. Season with salt and pepper to taste.
  10. Serve hot and enjoy!
