Spicy Chickpea and Sweet Potato Stew: A Hearty and Healthy Meal

Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper

  • 2 sweet potatoes, peeled and cubed
  • 2 cans chickpeas, drained and rinsed

  • 2 cups vegetable broth
  • 2 cups spinach
