Chicken Pad Thai is a classic Thai dish that is loved by many. It's a stir-fried noodle dish that's simple to make and packed with flavor. This recipe is a perfect balance of spicy, sweet, sour, and savory.
Ingredients:
- 8 oz. rice noodles
- 2 chicken breasts, sliced
- 3 cloves of garlic, minced
- 2 tbsp. vegetable oil
- 2 eggs, beaten
- 1/4 cup peanuts, chopped
- 1/4 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup bean sprouts
- Lime wedges (optional)
Start by soaking the rice noodles in a bowl of hot water for about 10 minutes or until they become soft. Drain the water and set the noodles aside.
Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the garlic and stir-fry for about 30 seconds until fragrant.
Add the sliced chicken to the pan and stir-fry for about 5-7 minutes until cooked through.
Push the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until they are cooked through, then mix them in with the chicken.
Add the soaked noodles to the pan, along with 1/4 cup of water, and stir-fry for about 2-3 minutes until the noodles are heated through.
Add the peanuts, green onions, cilantro, and bean sprouts to the pan and stir-fry for another minute or two until everything is well combined.
Serve the Chicken Pad Thai hot, with lime wedges on the side if desired. Enjoy!
