Ingredients:
- 8 oz. of rice noodles
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 2 tbsp. of vegetable oil
- 1 red bell pepper, sliced
- 1 cup of snow peas, trimmed
- 1/4 cup of chopped peanuts
- Fresh cilantro and lime wedges for garnish
For the peanut sauce:
- 1/3 cup of creamy peanut butter
- 2 tbsp. of soy sauce
- 2 tbsp. of honey
- 1 tbsp. of rice vinegar
- 1 tsp. of sesame oil
- 1/2 tsp. of ground ginger
- 1 clove of garlic, minced
- 1/4 cup of water
Instructions:
- Start by cooking the rice noodles according to the package instructions. Drain and set aside.
