Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 4 ears of fresh corn
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tbsp. lime juice
  • 2 tbsp. honey
  • 1 tsp. cumin
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Clean and devein the shrimp.
  3. Husk the corn and brush with olive oil.
  4. Grill the shrimp and corn for about 3-4 minutes per side, until cooked through.
  5. Remove from grill and let cool.
