Ingredients
- 1 lb. large shrimp, peeled and deveined
- 4 ears of fresh corn
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tbsp. lime juice
- 2 tbsp. honey
- 1 tsp. cumin
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Clean and devein the shrimp.
- Husk the corn and brush with olive oil.
- Grill the shrimp and corn for about 3-4 minutes per side, until cooked through.
- Remove from grill and let cool.
- Cut the corn off the cob and place in a large bowl.
