Ingredients:
- 1 cup all-purpose flour
- 1 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/2 pound fresh seafood (shrimp, squid, and/or clams), cleaned and chopped
- 1 bunch scallions, thinly sliced
- Vegetable oil for frying
- Soy dipping sauce (recipe below)
Instructions:
- In a large mixing bowl, whisk together the flour, water, salt, black pepper, and eggs until smooth.
- Add the seafood and scallions to the batter and mix well.
- Heat a skillet over medium-high heat and add enough vegetable oil to coat the bottom.
- Pour the batter into the skillet and spread it out evenly.
- Cook for 3-4 minutes on each side, until golden brown and crispy.
- Cut the pancake into wedges and serve hot with the soy dipping sauce.
Soy Dipping Sauce Recipe:
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon red pepper flakes
- In a small mixing bowl, whisk together all of the ingredients until well combined.
- Adjust the seasoning to taste, adding more honey or red pepper flakes as desired.
- Chill in the refrigerator until ready to serve.
