Ingredients:
- 1 pound of Italian sausage
- 2 bell peppers (red or green), sliced into strips
- 1 onion, sliced into strips
- 2 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until browned on all sides, about 8 minutes.
- Remove the sausage from the skillet and set it aside. Add the peppers, onion, and garlic to the skillet and sauté until they are tender, about 8 minutes.
- Add the diced tomatoes to the skillet and stir to combine. Return the sausage to the skillet and let everything simmer together for 10-15 minutes.
- Season with salt and pepper to taste, and serve hot with a side of crusty bread or over a bed of rice.
