Quick and Delicious Instant Pot Chicken Curry Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 can (14 ounces) coconut milk

Instructions:

  1. Turn on the Instant Pot and select the "Sauté" function. Once hot, add the olive oil.
  2. Add the diced onion and cook for a few minutes until soft and translucent. Add the minced garlic and grated ginger and cook for another minute.
  3. Add the chicken to the Instant Pot and cook until browned on all sides.

  8. Open the Instant Pot lid and stir the curry. Season with salt and pepper to taste.
  9. Serve hot over rice or with naan bread. Garnish with chopped cilantro.
