Ingredients
- 3-4 lbs of boneless pork shoulder
- 1 tbsp of smoked paprika
- 1 tbsp of garlic powder
- 1 tbsp of onion powder
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1 cup of BBQ sauce
- 1/2 cup of apple cider vinegar
- 1/4 cup of brown sugar
- 1/4 cup of ketchup
- 1/4 cup of Worcestershire sauce
- 1/2 head of cabbage, thinly sliced
- 2 large carrots, shredded
- 1/2 cup of mayonnaise
- 1/4 cup of Greek yogurt
- 1 tbsp of apple cider vinegar
- 1 tbsp of honey
- Salt and pepper to taste
Start by mixing together the smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl. Rub the mixture all over the pork shoulder, making sure to coat it evenly.
Place the pork shoulder in a slow cooker and pour in the BBQ sauce, apple cider vinegar, brown sugar, ketchup, and Worcestershire sauce. Give everything a good stir to make sure the pork is coated in the sauce.
While the pork is cooking, make the coleslaw by combining the sliced cabbage and shredded carrots in a large bowl. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine.
Cook the pork on low for 8-10 hours or on high for 4-5 hours, until it's tender and falls apart easily with a fork. Once the pork is done, use two forks to shred it into bite-sized pieces. Serve the pulled pork on buns with a generous spoonful of BBQ sauce and a scoop of coleslaw on top.
