- 1 lb. boneless chicken breast, cut into bite-size pieces

- 1 can (28 oz) diced tomatoes, undrained
- 2 cups chicken broth
- 1 tbsp. Cajun seasoning
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1 1/2 cups uncooked long grain rice
- Salt and black pepper, to taste
- Chopped green onions, for garnish
For this recipe, you'll want to use a large pot or Dutch oven. Heat a tablespoon of oil over medium-high heat, and then add the chicken and sausage. Cook until browned on all sides, stirring occasionally. Remove the meat from the pot and set aside.
Add the onion, green pepper, and garlic to the pot, and cook until softened. Pour in the tomatoes, chicken broth, and all of the seasonings. Stir well, and then add the rice.
