Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked white rice
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 2 cups chicken broth
- 1 tablespoon olive oil
- Fresh cilantro, for garnish
Instructions:
- Set your Instant Pot to sauté mode and add the olive oil.
- Add the diced onion and minced garlic and sauté until the onion is translucent and the garlic is fragrant.
- Add the chicken and sauté until it is lightly browned on all sides.
- Add the rice, diced tomatoes, black beans, chili powder, cumin, smoked paprika, and salt. Mix everything together until the rice is coated in the spices.
- Add the chicken broth and stir everything together one more time.
- Close the Instant Pot lid and set it to high pressure for 10 minutes.
- Once the 10 minutes are up, quick release the pressure and open the Instant Pot lid.
- Fluff the rice with a fork and let it sit for a few minutes to absorb any remaining liquid.
- Garnish with fresh cilantro and serve hot.
