Vietnamese Summer Rolls Recipe: Fresh and Healthy Delight

Ingredients:

  • 12 rice paper wrappers
  • 1 large carrot, julienned
  • 1 red bell pepper, julienned
  • 1 cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 12 large cooked shrimp, peeled and deveined
  • 1/2 cup cooked vermicelli noodles

Instructions:

1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.2. Lay the rice paper flat on a clean surface, such as a cutting board.3. Add a few leaves of mint, cilantro, and basil to the center of the rice paper.4. Add a few pieces of julienned carrot, red bell pepper, and cucumber on top of the herbs.5. Add a few strips of cooked vermicelli noodles on top of the vegetables.6. Fold the bottom of the rice paper up over the filling, then fold the sides in towards the center.7. Place a cooked shrimp on top of the folded edge, then continue rolling the rice paper tightly until it forms a neat package.8. Repeat with the remaining ingredients to make a total of 12 summer rolls.Serve the rolls with a dipping sauce of your choice, such as soy sauce, hoisin sauce, or peanut sauce.
