Crockpot Beef Stew: A Hearty and Delicious Recipe
Ingredients:
- 2 lbs. beef chuck roast, cut into cubes
- 4 large potatoes, peeled and chopped
- 4 carrots, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp. tomato paste
- 2 tsp. dried thyme
- 2 bay leaves
- 1 tsp. salt
- 1/2 tsp. black pepper
Instructions:
- Season the beef with salt and pepper.
- Heat a large skillet over medium-high heat and brown the beef on all sides. Transfer to the crockpot.
- Add the potatoes, carrots, onion, and garlic to the crockpot.
- In a bowl, whisk together the beef broth, red wine, tomato paste, thyme, salt, and black pepper. Pour over the beef and vegetables in the crockpot.
- Add the bay leaves and give everything a good stir.
- Cover and cook on low for 8-10 hours, or on high for 4-6 hours.
- Remove the bay leaves before serving.
