Crockpot Beef Stew: A Hearty and Delicious Recipe

Ingredients:

  • 2 lbs. beef chuck roast, cut into cubes
  • 4 large potatoes, peeled and chopped
  • 4 carrots, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp. tomato paste
  • 2 tsp. dried thyme
  • 2 bay leaves
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions:

  1. Season the beef with salt and pepper.
  2. Heat a large skillet over medium-high heat and brown the beef on all sides. Transfer to the crockpot.
  3. Add the potatoes, carrots, onion, and garlic to the crockpot.
  4. In a bowl, whisk together the beef broth, red wine, tomato paste, thyme, salt, and black pepper. Pour over the beef and vegetables in the crockpot.
  5. Add the bay leaves and give everything a good stir.
  6. Cover and cook on low for 8-10 hours, or on high for 4-6 hours.
  7. Remove the bay leaves before serving.
