If you're craving a spicy and flavorful Korean dish, look no further than dak galbi. This popular dish features marinated chicken stir-fried with vegetables and spices, served with steamed rice. This recipe is easy to make and perfect for a weeknight dinner.
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup gochujang (Korean red pepper paste)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice wine or mirin
- 2 tablespoons sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 onion, sliced
- 1 sweet potato, peeled and sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced cabbage
- 2 green onions, sliced
- 2 cups cooked rice, for serving
To make the marinade, mix together the gochujang, soy sauce, honey, rice wine or mirin, sesame oil, garlic, and ginger in a large bowl. Add the chicken and toss to coat. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
Add the onions, sweet potatoes, and bell peppers to the same skillet and stir-fry for 5-7 minutes, or until the vegetables are tender. Add the cabbage and stir-fry for another 2-3 minutes. Return the chicken to the skillet and stir everything together. Cook for an additional 2-3 minutes, or until everything is heated through.
Garnish with sliced green onions and serve hot with steamed rice.
