Ingredients:
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 large onion, sliced into thin strips
- 2 cups shredded cheese (we recommend using a blend of cheddar and Monterey Jack)
- 8 flour tortillas
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
Instructions:
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until browned on both sides, about 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced peppers and onions. Cook until they are tender and slightly charred, about 8-10 minutes. Add chili powder, garlic powder, cumin, salt and pepper to taste. Stir well.
- Preheat a large skillet or griddle over medium-high heat. On each tortilla, sprinkle some shredded cheese, add a few spoonfuls of the chicken fajita mixture, and sprinkle with more cheese. Top with another tortilla.
- Place the quesadillas on the skillet or griddle and cook until the cheese is melted and the tortillas are crispy, about 3-4 minutes per side.
- Remove from heat and let cool for a few minutes before cutting into wedges. Serve with your favorite toppings such as guacamole, sour cream, and salsa.
