Delicious Chicken Fajita Quesadillas Recipe

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 large onion, sliced into thin strips
  • 2 cups shredded cheese (we recommend using a blend of cheddar and Monterey Jack)
  • 8 flour tortillas
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until browned on both sides, about 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the sliced peppers and onions. Cook until they are tender and slightly charred, about 8-10 minutes. Add chili powder, garlic powder, cumin, salt and pepper to taste. Stir well.
  3. Preheat a large skillet or griddle over medium-high heat. On each tortilla, sprinkle some shredded cheese, add a few spoonfuls of the chicken fajita mixture, and sprinkle with more cheese. Top with another tortilla.
  4. Place the quesadillas on the skillet or griddle and cook until the cheese is melted and the tortillas are crispy, about 3-4 minutes per side.
  5. Remove from heat and let cool for a few minutes before cutting into wedges. Serve with your favorite toppings such as guacamole, sour cream, and salsa.
