Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup rice flour
- 1 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 3/4 cup water
- 1/2 cup chopped green onion
- 1/2 cup chopped mixed seafood (shrimp, squid, and/or clams)
- 2 tbsp vegetable oil
To make the batter, mix together the all-purpose flour, rice flour, salt, and black pepper in a large mixing bowl. In a separate bowl, beat the egg and water together until well combined. Slowly pour the egg mixture into the flour mixture, whisking constantly to avoid lumps. Stir in the chopped green onion and mixed seafood until evenly distributed.
Heat a large non-stick skillet over medium-high heat. Add the vegetable oil and swirl to coat the bottom of the pan. Pour in half of the batter and spread it evenly with a spatula. Cook for 3-4 minutes, or until the bottom is golden brown and crispy.
