Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 lemon, sliced
- 1/4 cup butter, melted
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
Preheat your oven to 400°F. Arrange the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and minced garlic, then season with salt and pepper. Top each fillet with a slice of lemon.
In a small bowl, mix together melted butter and lemon juice. Pour the mixture over the salmon fillets.
In a separate bowl, toss the sliced vegetables with olive oil, salt, and pepper. Arrange the vegetables around the salmon fillets on the baking sheet.
Bake for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender and golden brown. Serve hot and enjoy!
