Creamy Tomato Soup with Grilled Cheese Sandwich Recipe

If you're looking for a comforting and delicious meal, you can't go wrong with a classic combo of creamy tomato soup and grilled cheese sandwich. This recipe is easy to make and perfect for a cozy evening at home or a quick lunch break.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 8 slices of bread
  • 8 slices of cheddar cheese
  • Butter for grilling

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until softened, about 5 minutes. Add the crushed tomatoes and broth, bring to a simmer, and cook for 10 minutes.

Using an immersion blender or transferring to a blender, puree the soup until smooth. Return to the pot and stir in the heavy cream. Season with salt and pepper to taste.

For the grilled cheese sandwich, heat a non-stick pan over medium heat. Butter one side of each slice of bread and place butter-side down in the pan. Top each slice with a slice of cheddar cheese and the remaining bread slices. Grill until golden brown and the cheese is melted, about 2-3 minutes per side.
