If you are looking for a mouthwatering and easy-to-make dinner recipe, then look no further than this Instant Pot Green Chile Pork. This recipe is perfect for those who are short on time but still want a flavorful and delicious meal.

Ingredients:

  • 2 pounds pork shoulder, trimmed and cut into 2-inch cubes
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup diced green chiles
  • 1 lime, juiced

Begin by heating the Instant Pot on the sauté function. Add the vegetable oil and pork cubes, cooking until browned on all sides. Remove the pork from the Instant Pot and set aside.

Add the diced onion to the Instant Pot, cooking until softened. Add the minced garlic, ground cumin, dried oregano, salt, and black pepper, stirring until fragrant.

Add the chicken broth, diced green chiles, and lime juice to the Instant Pot, stirring to combine. Add the browned pork back to the pot, making sure that it is submerged in the liquid.

Close the Instant Pot lid and set the pressure release valve to sealing. Cook on high pressure for 60 minutes, allowing for a natural release of pressure.

Once the pressure has released, remove the lid and use a slotted spoon to transfer the pork to a serving dish. Shred the pork with two forks, and then spoon the cooking liquid over the top. Serve with rice or tortillas, and enjoy!
