Ingredients:
- 1 pound beef chuck roast, sliced thinly
- 8 cups beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, sliced
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon ginger, grated
- 8 oz noodles (udon or ramen)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the sliced beef and cook until browned, about 5-7 minutes. Remove the beef from the pot and set aside.
- Add the chopped onions and minced garlic to the pot and sauté until fragrant, about 2-3 minutes.
- Add the sliced carrots, celery, and red bell pepper to the pot and sauté for another 5 minutes.
- Return the beef to the pot and add the beef broth, soy sauce, fish sauce, and grated ginger. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the noodles to the pot and cook for 8-10 minutes or until tender.
