Delicious Passover Banana Bread Recipe

If you're looking for a sweet and moist dessert to enjoy during Passover, this banana bread recipe is perfect! Made with matzo meal and almond flour, this recipe is not only gluten-free but also delicious!

To start, preheat your oven to 350°F and grease a loaf pan with non-stick cooking spray.

In a mixing bowl, mash 2-3 overripe bananas until they are smooth. Then, add 1/2 cup of sugar, 2 beaten eggs, 1/3 cup of vegetable oil, and 1/2 teaspoon of vanilla extract. Mix until all ingredients are well combined.

In a separate bowl, mix 1 cup of matzo meal, 1/2 cup of almond flour, 1/4 teaspoon of salt, and 1 teaspoon of baking powder. Slowly add the dry ingredients to the banana mixture and mix until everything is well combined.

If you like, you can add 1/2 cup of chopped walnuts to the batter for some extra texture and flavor.

Pour the batter into the greased loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Once the bread is baked, remove it from the oven and let it cool for a few minutes before removing it from the pan. Slice and serve warm with a dollop of whipped cream or plain yogurt.
