- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño pepper, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup uncooked white rice
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 2-3 minutes.
- Add the chicken and cook until browned, about 5-7 minutes.
- Add the red bell pepper and jalapeño pepper and cook for another 2-3 minutes.
- Add the cumin, chili powder, and smoked paprika and stir to combine.
- Add the chicken broth, diced tomatoes, and uncooked rice. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice is cooked through.
- Stir in the chopped cilantro and season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with additional cilantro if desired.
