Lemon Garlic Shrimp with Angel Hair Pasta Recipe
Ingredients:
- 1 pound angel hair pasta
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- Cook the angel hair pasta according to the package directions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and cook until fragrant, about 1-2 minutes.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- Add the white wine, chicken broth, and lemon juice to the skillet. Bring to a simmer and cook for 5-7 minutes or until the liquid has reduced by half.
- Return the shrimp to the skillet and add the cooked angel hair pasta. Toss to combine and heat through.
- Add the chopped parsley and grated Parmesan cheese. Season with salt and pepper, if needed.
- Serve hot and enjoy!
Tips:
- Make sure to properly devein the shrimp before cooking to avoid any unwanted grit or texture.
- If you prefer a spicier dish, add more red pepper flakes or even some sliced jalapeño peppers to the skillet.
- For a lower carb option, you can substitute the angel hair pasta with zucchini noodles or spaghetti squash.
