Ingredients:
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, chopped into small cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
Start by preheating your oven to 400°F. In a small bowl, mix together the olive oil, garlic, lemon juice, oregano, basil, salt, and pepper. Place the chicken breasts and chopped potatoes in a large baking dish, and pour the herb mixture over them.
Use your hands to toss the chicken and potatoes until they're evenly coated with the herb mixture. Arrange the chicken in a single layer on top of the potatoes. Slice a lemon into thin rounds and place them on top of the chicken.
Bake the chicken and potatoes for 35-40 minutes or until the chicken is cooked through and the potatoes are tender. Remove from the oven and let it rest for a few minutes before serving. Garnish with additional fresh herbs and lemon wedges, if desired.
