Grilled Cheese and Tomato Soup Recipe - A Comforting Classic

There's something so satisfying about a warm bowl of tomato soup paired with a gooey, crispy grilled cheese sandwich. This classic combination is perfect for a cozy night in or a quick and easy lunch. Here is a simple recipe to make your own grilled cheese and tomato soup:

Ingredients:

  • 2 cans of crushed tomatoes
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • 8 slices of bread
  • 8 slices of cheddar cheese
  • 2 tablespoons of olive oil

For the tomato soup:

  1. In a large pot, sauté the chopped onion and minced garlic in olive oil until softened.
  2. Add the crushed tomatoes and chicken or vegetable broth to the pot and bring to a boil.
  3. Reduce the heat and let the soup simmer for 15-20 minutes.
  4. In a separate small saucepan, melt the butter over medium heat.
  5. Add the flour to the melted butter and whisk together until smooth.
  6. Gradually add the heavy cream to the butter and flour mixture, whisking constantly until the mixture thickens.
  7. Add the cream mixture to the soup and stir until well combined.
  8. Season the soup with salt and pepper to taste.

For the grilled cheese:

  1. Preheat a non-stick skillet over medium heat.
  2. Take two slices of bread and place a slice of cheddar cheese between them.
  3. Butter one side of each sandwich and place the sandwiches butter side down in the preheated skillet.
  4. Cook the sandwiches until golden brown and the cheese is melted, about 2-3 minutes per side.
  5. Repeat for the remaining sandwiches.
