Ingredients:
- 2 cans of crushed tomatoes
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 8 slices of bread
- 8 slices of cheddar cheese
- 2 tablespoons of olive oil
For the tomato soup:
- In a large pot, sauté the chopped onion and minced garlic in olive oil until softened.
- Add the crushed tomatoes and chicken or vegetable broth to the pot and bring to a boil.
- Reduce the heat and let the soup simmer for 15-20 minutes.
- In a separate small saucepan, melt the butter over medium heat.
- Add the flour to the melted butter and whisk together until smooth.
