Pan-seared Tilapia with Roasted Vegetables Recipe

Ingredients:

  • 4 tilapia fillets
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Start by preheating your oven to 400°F. Arrange the sliced onion, bell peppers, zucchini, and yellow squash on a baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and black pepper. Roast in the oven for 20-25 minutes or until vegetables are tender and lightly browned.

While the vegetables are roasting, pat the tilapia fillets dry with a paper towel and season both sides with paprika, salt, and black pepper.

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, add the seasoned tilapia fillets and cook for 3-4 minutes on each side or until the fish is golden brown and cooked through.

Once the vegetables are done roasting, serve the pan-seared tilapia fillets on a bed of the roasted vegetables. Sprinkle with fresh herbs and serve immediately.
