Ingredients:
- 4 salmon fillets (6 ounces each)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6 cups mixed greens
- 1/2 red onion, sliced
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- 2 oranges, peeled and segmented
- 1/4 cup olive oil
- 3 tablespoons freshly squeezed orange juice
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Begin by preheating your grill to medium-high heat. Rub the salmon fillets with olive oil and season both sides with salt and black pepper. Place the salmon fillets on the grill and cook for 3-4 minutes per side, or until the internal temperature reaches 145°F.
While the salmon is grilling, prepare the mixed greens salad. In a large bowl, combine the mixed greens, sliced red onion, sliced almonds, crumbled feta cheese, and segmented oranges.
To make the citrus vinaigrette, whisk together olive oil, freshly squeezed orange juice, honey, Dijon mustard, salt, and black pepper in a small bowl. Drizzle the vinaigrette over the mixed greens salad and toss to combine.
Once the salmon is cooked, serve it on a plate with a generous helping of the mixed greens salad on the side. Enjoy!
