Delicious Grilled Vegetable Quesadillas Recipe

Grilled vegetable quesadillas are a scrumptious and healthy meal option that can be prepared easily in no time. This recipe is perfect for vegetarians and those who love Mexican cuisine. The combination of grilled veggies and cheese in a crispy tortilla shell is sure to make your taste buds dance.

To start, gather the following ingredients:

  • 4 medium-sized tortillas
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Preheat your grill or grill pan to medium-high heat. In a large bowl, toss the sliced vegetables with olive oil, salt, and pepper. Place the veggies on the grill and cook for about 5-7 minutes, until they are tender and slightly charred. Remove from the grill and set aside.
