Ingredients:
- 2 large eggplants, sliced into ½-inch-thick rounds
- 1 cup all-purpose flour
- 2 cups Italian seasoned breadcrumbs
- 1 cup grated Parmesan cheese
- 4 cups marinara sauce
- 16 oz. fresh mozzarella cheese, sliced
- 1/4 cup chopped fresh basil
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- Slice the eggplant into 1/2-inch-thick rounds. Sprinkle with salt and let sit for 10-15 minutes to remove excess moisture. Rinse and pat dry.
- Place the flour and breadcrumbs in separate bowls. Add the grated Parmesan cheese to the breadcrumbs and mix well.
- Dredge each eggplant slice in flour, then dip in the egg, and coat with the breadcrumb mixture. Place the eggplant slices on the prepared baking sheet and drizzle olive oil on top.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Spread 1/2 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Layer half of the eggplant slices in the dish, followed by half of the sliced fresh mozzarella cheese. Repeat with the remaining eggplant and mozzarella cheese.
- Pour the remaining marinara sauce on top of the eggplant and cheese. Sprinkle with chopped fresh basil.
- Cover the baking dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
