Japchae Recipe: Delicious Sweet Potato Noodles with Vegetables and Beef

Ingredients:

  • 8 ounces of sweet potato starch noodles
  • 8 ounces of thinly sliced beef
  • 4 shiitake mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Bring a pot of water to boil and cook the sweet potato noodles for about 7 minutes or until tender. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a bowl, mix together the soy sauce, sugar, and sesame oil. Set aside.
  3. Heat up the vegetable oil in a wok or large skillet over high heat. Add the garlic and stir-fry for 10 seconds. Then, add the beef and stir-fry until browned.
  4. Add the mushrooms, bell pepper, carrot, and onion. Stir-fry for a few minutes until the vegetables are cooked but still slightly crunchy.
  5. Add the cooked sweet potato noodles and the soy sauce mixture to the wok. Stir-fry for a few more minutes until everything is well combined and heated through.
  6. Season with salt and pepper to taste.
