Ingredients:
- 2 tablespoons of green curry paste
- 1 can of coconut milk
- 1 cup of chicken or vegetable broth
- 1 medium-sized onion, sliced
- 1 red bell pepper, sliced
- 1 cup of green beans, trimmed
- 1 cup of broccoli florets
- 1 pound of chicken breast or shrimp
- 1 tablespoon of fish sauce
- 1 tablespoon of brown sugar
- 1 tablespoon of vegetable oil
- 1/4 cup of fresh basil leaves, chopped
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the green curry paste and stir-fry for 1-2 minutes until fragrant.
- Add the sliced onion and stir-fry for another 2-3 minutes until softened.
- Add the chicken or shrimp and stir-fry for 2-3 minutes until cooked through.
- Add the sliced red bell pepper, trimmed green beans, and broccoli florets. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.
- Pour in the coconut milk and chicken or vegetable broth. Stir well and bring to a boil.
- Add the fish sauce and brown sugar. Stir well and let simmer for 10-15 minutes until the curry thickens slightly.
- Turn off the heat and stir in the fresh basil leaves.
- Serve hot with steamed rice.

- You can use any meat or seafood of your choice, such as beef, pork, or tofu.
- If you prefer a milder version, you can use less green curry paste or substitute it with red curry paste.
