Spicy and Creamy Green Curry Recipe

If you're a fan of Thai cuisine, you must try the Green Curry! This dish is known for its spicy and creamy flavor, made from a green curry paste, coconut milk, vegetables, and meat or seafood. It's a perfect comfort food that will warm you up on cold days.

Ingredients:

  • 2 tablespoons of green curry paste
  • 1 can of coconut milk
  • 1 cup of chicken or vegetable broth
  • 1 medium-sized onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup of green beans, trimmed
  • 1 cup of broccoli florets
  • 1 pound of chicken breast or shrimp
  • 1 tablespoon of fish sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of vegetable oil
  • 1/4 cup of fresh basil leaves, chopped

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat. Add the green curry paste and stir-fry for 1-2 minutes until fragrant.
  2. Add the sliced onion and stir-fry for another 2-3 minutes until softened.
  3. Add the chicken or shrimp and stir-fry for 2-3 minutes until cooked through.
  4. Add the sliced red bell pepper, trimmed green beans, and broccoli florets. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.
  5. Pour in the coconut milk and chicken or vegetable broth. Stir well and bring to a boil.
  6. Add the fish sauce and brown sugar. Stir well and let simmer for 10-15 minutes until the curry thickens slightly.
  7. Turn off the heat and stir in the fresh basil leaves.
  8. Serve hot with steamed rice.

Tips:

  • You can use any meat or seafood of your choice, such as beef, pork, or tofu.
  • If you prefer a milder version, you can use less green curry paste or substitute it with red curry paste.
  • You can add more vegetables, such as carrots, zucchini, or eggplant, to make the curry more nutritious.
