Spicy Kimchi Recipe: A Perfectly Fermented Delight

If you are a fan of Korean cuisine, you must have heard of Kimchi. Kimchi is a traditional Korean dish made from fermented vegetables, usually cabbage, with a blend of spicy seasonings and spices. Not only is it a healthy and flavorful dish, but it is also packed with probiotics, which makes it a perfect addition to your diet.

This spicy kimchi recipe is easy to make at home and takes only a few minutes to prepare. Here is what you'll need:

  • 1 medium-sized cabbage
  • 1/4 cup of salt
  • 2 tablespoons of gochugaru (Korean red pepper flakes)
  • 1 tablespoon of sugar
  • 1 tablespoon of minced garlic
  • 1 teaspoon of ginger paste
  • 1/4 cup of fish sauce
  • 1/4 cup of water
  • 3-4 green onions, thinly sliced

Start by cutting the cabbage into small pieces and toss them into a large bowl. Add salt to the cabbage and mix it well. Let the cabbage sit for at least 2 hours or until it wilts.

In a separate bowl, mix gochugaru, sugar, minced garlic, ginger paste, fish sauce, and water. Mix well to create a spice paste.

Once the cabbage has wilted, rinse it in cold water and squeeze out the excess water. Add the green onions to the cabbage and mix well. Then, add the spice paste to the cabbage and mix everything thoroughly.

Transfer the kimchi mixture to a jar and press it down to ensure there are no air bubbles. Leave the jar at room temperature for 1-2 days to ferment. Once it's fermented, store it in the refrigerator.
