- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 can (14 oz) coconut milk
- 1/2 cup chicken broth
- 1 tbsp green curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup sliced bamboo shoots
- 1/4 cup fresh basil leaves
- Cooked rice, for serving
First, cut the chicken breasts into bite-sized pieces. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.
Add the coconut milk, chicken broth, green curry paste, fish sauce, and brown sugar to the skillet. Stir to combine, and bring the mixture to a simmer.
