Creamy Tomato and Spinach Pasta Recipe

Ingredients:

  • 1 pound of pasta
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 1/2 cup of heavy cream
  • 1/2 cup of grated parmesan cheese
  • 2 cups of fresh spinach
  • Salt and pepper to taste

Begin by cooking your pasta according to package instructions. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until fragrant and translucent, about 3-4 minutes.

Add the can of diced tomatoes to the skillet and bring to a simmer. Allow the mixture to cook for about 5 minutes, or until the tomatoes have broken down and the sauce has thickened slightly. Stir in the heavy cream and parmesan cheese until well combined.
