Ingredients
For the chicken marinade:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
For the sauce:
- 2 tablespoons butter
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14.5 ounces) diced tomatoes
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large bowl, mix together all the ingredients for the chicken marinade until well combined. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 400°F. Thread the chicken onto skewers and place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until cooked through.
- In a large skillet, melt the butter over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes. Add the garlic and ginger and sauté for another minute.
- Add the cumin, paprika, coriander, garam masala, turmeric, and cayenne pepper (if using) and sauté for another minute.
- Stir in the diced tomatoes and their juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in the heavy cream and bring to a simmer. Cook for 5-10 minutes or until the sauce reaches your desired consistency. Taste and adjust seasoning with salt and pepper as needed.
- Remove the chicken from the skewers and add it to the sauce. Simmer for 5-10 minutes or until heated through.
- Serve hot with rice or naan bread.
