Ingredients

For the chicken marinade:
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
For the sauce:
  • 2 tablespoons butter
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together all the ingredients for the chicken marinade until well combined. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 2 hours or overnight.
  2. Preheat the oven to 400°F. Thread the chicken onto skewers and place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until cooked through.
  3. In a large skillet, melt the butter over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes. Add the garlic and ginger and sauté for another minute.
  4. Add the cumin, paprika, coriander, garam masala, turmeric, and cayenne pepper (if using) and sauté for another minute.
  5. Stir in the diced tomatoes and their juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Stir in the heavy cream and bring to a simmer. Cook for 5-10 minutes or until the sauce reaches your desired consistency. Taste and adjust seasoning with salt and pepper as needed.
  7. Remove the chicken from the skewers and add it to the sauce. Simmer for 5-10 minutes or until heated through.
  8. Serve hot with rice or naan bread.
