Ingredients:
- 1 (3-pound) beef roast
- 4 large potatoes, peeled and cut into chunks
- 4 large carrots, peeled and cut into chunks
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Preheat your oven to 375°F. Season the beef roast with salt, pepper, and dried thyme. Rub the minced garlic all over the roast.
Place the potatoes and carrots in a roasting pan. Drizzle the vegetables with olive oil and sprinkle with salt and pepper. Use your hands to toss everything together.
Place the seasoned beef roast on top of the vegetables in the roasting pan. Roast in the preheated oven for 1 1/2 to 2 hours, or until the beef is cooked to your desired level of doneness.
Remove the roast from the oven and allow it to rest for at least 10 minutes before slicing and serving with the roasted potatoes and carrots.
