Ingredients:
- 2 large sweet potatoes, peeled and grated
- 1 onion, grated
- 2 eggs, beaten
- 3 tablespoons matzo meal

- Oil for frying
To begin, peel and grate two large sweet potatoes and one onion. In a large bowl, mix together the grated sweet potatoes and onion, beaten eggs, matzo meal, salt, and black pepper until well combined.
