Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup mushrooms, sliced
- 1 tablespoon soy sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon sesame oil
- Salt and pepper to taste
Start by heating the vegetable oil in a large skillet over medium-high heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant and golden brown, about 2-3 minutes.
Add the sliced bell peppers, broccoli florets, snow peas, and sliced mushrooms to the skillet, and stir-fry for 5-7 minutes, or until the veggies are tender-crisp and slightly charred on the edges.
In a small bowl, whisk together the soy sauce, sriracha, honey, sesame oil, salt, and pepper. Pour the sauce over the veggies in the skillet, and stir-fry for another 1-2 minutes, or until the sauce is thickened and bubbly.
Remove the skillet from the heat, and serve the Spicy Vegetable Stir-Fry over steamed rice, noodles, or quinoa. Garnish with chopped scallions, cilantro, or sesame seeds, if desired.
