Sujebi - A Satisfying Hand-Torn Noodle Soup with Vegetables and Seafood or Meat

Ingredients:

  • 2 cups all-purpose flour

  • 1 cup warm water
  • 1 tablespoon vegetable oil
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 carrot, sliced
  • 1/2 pound seafood or meat of your choice (shrimp, clams, beef, chicken, etc.)
  • 2 green onions, thinly sliced

To make the noodles, mix together the flour and salt in a large bowl. Slowly add the warm water while stirring until a dough forms. Knead the dough for a few minutes until smooth, then cover and let rest for 20 minutes.Once the dough has rested, tear it into small, irregular pieces.
